Orange Chocolate Chip Bread

My favorite combo of orange and chocolate is back! This bread is super moist with the perfect hint of orange flavor and chunks of chocolate.

You use orange juice and 4 teaspoons of grated orange peel to get the citrus flavor. It’s not overpowering and smells amazing while baking in the oven.

Orange Chocolate Chip Bread

4 teaspoons grated orange peel
1/3 cup orange juice
boiling water
2 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 egg
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

1. Preheat oven to 350 F. Place orange peel in a small bowl. Pour juice in a measuring cup; add enough boiling water to measure 1 cup. Pour over orange peel; let stand for 10 minutes.
2. In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. In another bowl, whisk the egg, butter, vanilla and reserved orange mixture. Stir into flour mixture until moistened. Fold in chocolate chips.
3. Pour into a greased 8×4-inch loaf pan. (I used a 9×5-inch pan and baked it for 35-40 mins) Bake for 55-65 minutes. Let cool. Enjoy.

Pumpkin Bread

Super easy and delicious pumpkin quick bread.  Smells amazing baking in the oven.

Pumpkin Bread

Makes 2 loaves

1.5 cups sugar
1.5 cups packed brown sugar
1 cup vegetable oil
4 eggs
3 1/3 cups flour
2 tsp baking soda
2 tsp cinnamon
1.5 tsp salt
1 tsp nutmeg
2/3 water
1 15-ounce can pumpkin

1. Preheat oven to 350 F. Grease 9x5x3 inch loaf pan.
2. Combine sugar, brown sugar and oil. Add eggs, beat well. Set aside.
3. In another bowl, combine flour, soda, cinnamon, salt and nutmeg. Alternately add flour mixture and the water to sugar mixture until combined. Beat in pumpkin.
4. Spread evenly into pans. Bake 55-60 minutes. Enjoy.
