This cake is so light and fluffy and delicious!
Pumpkin Angel Food Cake
1 cup canned pumpkin puree
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp ground cloves
1/8 tsp ginger
1 package angel food cake mix
Cool Whip for topping
Chopped pecans or walnuts for topping
1. Preheat oven to 350 F. Combine pumpkin and spices in a large bowl.
2. Prepare cake mix using box directions in another bowl. Fold a quarter of the batter into pumpkin mixture. Gently fold in remaining cake batter.
3. Spoon into an ungreased 10-inch tube pan (not a fluted Bundt pan). Bake for 40 to 45 minutes, or until golden on top.
4. Serve cooled cake with Cool Whip and a sprinkle of grated walnuts.
