Pumpkin Bread

Super easy and delicious pumpkin quick bread.  Smells amazing baking in the oven.

Pumpkin Bread

From: Fall Baking magazine
Makes 2 loaves

1.5 cups sugar
1.5 cups packed brown sugar
1 cup vegetable oil
4 eggs
3 1/3 cups flour
2 tsp baking soda
2 tsp cinnamon
1.5 tsp salt
1 tsp nutmeg
2/3 water
1 15-ounce can pumpkin

1. Preheat oven to 350 F. Grease 9x5x3 inch loaf pan.
2. Combine sugar, brown sugar and oil. Add eggs, beat well. Set aside.
3. In another bowl, combine flour, soda, cinnamon, salt and nutmeg. Alternately add flour mixture and the water to sugar mixture until combined. Beat in pumpkin.
4. Spread evenly into pans. Bake 55-60 minutes. Enjoy.
